
That turkey your making *needs* some homemade cranberry sauce to compliment it. Sure you could buy a can of the stuff, but homemade is so much better and builds family traditions. I remember making homemade cranberry sauce with my grandma very Thanksgiving.
This recipe is a healthy version using honey instead of sugar. It comes from Nikki & David Goldbeck's best-selling American Wholefoods Cuisine. You can find ideas for a complete vegetarian Thanksgiving meal on their website HERE.
Ingredients:
- 2 cups cranberries
- ½ cup apple juice
- ½ cup honey
- 1 teaspoon grated or minced orange rind, preferably organic
Directions:
- Combine cranberries, apple juice and honey in a saucepan and simmer for 5 minutes, until berries pop.
- Remove from heat and stir in orange rind.
- Cool to room temperature, then chill in a covered container.
*Can be stored in the fridge for up to two weeks.
