Chocolate fudge recipe for National Fudge Day

It's so much fun and so tasty to celebrate holidays like today -- National Fudge Day.  I've previously posted recipes for easy, delicious, nutty chocolate fudge, five-minute fudge, and fudgy brownie sundaes so click the links and don't miss those recipes.

Here's another great chocolate fudge recipe, just perfect for today's celebration.

Chocolate Fudge Recipe
2 cups sugar
2 squares unsweetened chocolate, grated
OR 6 tablespoons cocoa
2 tablespoons butter
2/3 cup milk
1 teaspoon vanilla extract
few grains of salt

Combine sugar, milk, butter and either grated chocolate OR cocoa.  Cover until boiling point is reached.  Boil to soft ball stage (234°-238° F.).  Add vanilla and let cool, without stirring.  Beat until mixture is creamy, thick, and will hold its shape when dropped from a teaspoon.  Drop by teaspoonfuls onto waxed paper, or pour into well-buttered, shallow pan.  Cut in squares.

Fudge Tips: 
  • Do not allow your fudge to go higher than 240° F. or it will become dry and crumbly.
  • If you are unfamiliar with what the soft ball stage looks and feels like, be sure to use a candy thermometer for fail-proof fudge.
  • It is better to undercook fudge slightly as it will continue to cook while it is cooling.
  • Be sure to use a high-quality pure vanilla extract with no corn syrup or water added for better tasting results.
