Mixed berry cobbler recipe

Mixed berry cobbler is delicious. It can be served a la mode or warm or cold.

Frozen mixed berries are a fine substitute if you do not have access to quality fresh berries.

What is great about this recipe is it does not need much sugar.  The natural sweetness of the berries offers a sublime flavor without overpowering.

Ingredients:

2 tablespoons flour
1 tablespoon dark brown sugar
1 tablespoon cold unsalted butter
12 ounces of frozen/or fresh mixed berries
2 tablespoons granulated sugar
1 tablespoon cornstarch
1 teaspoon fresh lemon juice

Directions:

Preheat oven to 375 degrees. Mix the flour and brown sugar in a small bowl. Cut the butter into small pieces, add to the bowl, and mix and mash until the mixture is crumbly. In a medium bowl, combine the berries, sugar, cornstarch, and lemon juice. Toss a bit. Put the berry mixture into a baking dish then top with crumbly topping.  Bake until the topping is golden and the berries are bubbly, approximately 30-35 minutes.
