Cookies for an amazing cause: kids! The scrumptious Lacey Sue Z. cookie mix

Sue Zelickson's Lacey Sue Z. cookies came about almost by accident.  She cooked with her mother frequently as a girl and these cookies were created on a day when she decided to spend some time in the kitchen baking on her own.  The cookies came out very thin but had an amazing flavor.  As an avid home cook I can imagine her surprise as she pulled them from the oven that first time.  Perplexed but intrigued by how delicious they were, she kept these cookies in the back of her mind and eventually enlisted the help of a scientist to assist her in making this recipe into a mix that could be marketed.  In the past these cookies have been sold at the Fancy Food Shows and they are currently available in several Twin Cities stores including epitome at the Galleria in Edina, Local D'lish in Minneapolis, Corazon in Minneapolis, Golden Fig in St. Paul and at The Mill City Farmers Market in downtown Minneapolis.  They are packaged in whimsical tins in the time share kitchen at the Midtown Global Market in Minneapolis with the assistance of Women Who Really Cook member Shelagh Mullen. 

Sue donates the proceeds of the Lacey Sue Z. cookies to kid's charities and currently the Kids Cooking Program at Perspectives in St. Louis Park, MN is the very deserving recipient of her generosity.  The Kids Cafe at Perspectives provides daily nutrition for homeless and at risk children.  It is in this kitchen that Chef Dan, numerous amazing volunteers and his guest chef's teach kids how to prepare their own meals while at the same time educating them on the basics of good nutrition and kitchen hygiene.  Additionally the kids learn the social skills that are so essential to the success that can be achieved through teamwork. 

Sue Zelickson is a popular and well known Twin Cities food editor and radio personality.  She is the host of  WCCO Radio's "Food For Thought" as well as Sue Zelickson's Foodcast!  She also shares her knowledge and insight regarding all things culinary in a column for Minnesota Monthly magazine.  She is an advocate of giving of our time and talents and she definitely leads by example.

Next time you are looking for a flavorful treat pick up a tin of the Lacey Sue Z. cookies.  Laced with tiny bits of rich chocolate they have a winning combination of delicate texture and great taste.  They appear to have almost a veined or stained glass effect.  Sue has ideas for additions to the batter to shake up the flavor: Stir in  1/4 cup of chopped pecans, almonds, walnuts or butter brickle chips.  I baked the cookies on a Friday and used them as as the grand topper for our ice cream sundaes over the weekend.  The vanilla ice cream with pieces of the Lacey Sue Z. cookies mixed in added a delicious crunch that we all enjoyed. 

Yields: 8-9 dozen cookies  ~ Any leftover dough can be refrigerated so you can have these cookies at a moments notice.  They only take 3-5 minutes to bake.
