Bethenny's low fat fudge chocolate chip muffins
The recipe for these low fat fudge chocolate chip muffins was written by Bethenny Frankel. She also stars on Bravo's number one series, The Real Housewives of New York City. She is a health expert and consults on ehow.com. These muffins are low fat as well as wheat, egg and dairy free. Bethenny strives to create foods that never compromise on taste and just one bite of these muffins is proof that she is sticking to her mission. The use of applesauce gives them an incredibly moist texture and the rich chocolate flavor makes them the healthiest treat to ever land on my "crave" list. Luckily the guilt factor on these muffins is pretty much nonexistent!
Low Fat Fudge Chocolate Chip Muffins - reprinted with the written permission of Bethenny Frankel
Ingredients:
- 1 cup unsweetened applesauce
- 1/2 cup raw sugar
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 3/4 cup oat flour
- 1/3 cup cocoa powder
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup semisweet vegan chocolate chips*
- 1 dash cinnamon
Directions:
Preheat oven to 375 degrees. Coat a regular sized muffin tin with cooking spray (or use paper muffin liners). Combine all of the above ingredients in a large mixing bowl. Using a 3 ounce ice cream scoop, evenly scoop batter into muffing tins and bake for 20-25 minutes, rotating half way through the cooking time. When a toothpick comes out clean the muffins are done. Allow to fully cool and pop out with a spoon.
Yield: 8 muffins
*The vegan chocolate chips, oat flour, and raw sugar were purchased at Lakewinds Natural Foods. Check with the local health food stores in your area for these and other natural ingredients.
