A Civet is a small night animal that looks like a cat. It has a super-developed sense for sniffing coffee beans. As a real gourmet, it chooses the best, but a Civet doesn't munch it, a Civet doesn't eat it and a Civet doesn't digest it. These special beans just slip through Civet's alimentary tract. Then, natives of Sumatra, Java, Bali, Sulawesi in Indonesia (in the Philippines, Vietnam and East Timor) have to hunt after it in the jungle and collect the undamaged ones. After that, comes some human intervention. A cleaning and sanitizing procedure, sun drying, roasting, packing and shipping to the all best gourmet spots in the world. This coffee has become very famous in high society. The taste is rich in earthy flavor, with hints of chocolate or caramel. The body is smooth and syrupy. It might be so popular for its special origin, but I don't think it is for the special “musty” smell (stinks :o)).

All scientific analysis confirm that Kopi Luwak is not dangerous for health. Dr. Marcone said that as a scientist, he doubted about the safety of a product which has been in contact with excrement but his final tests show that due to the thorough washing process the quantity of pathogen organisms in the beans is insignificant. Whatever the washing process misses the roasting and brewing process will make up for.
