Mark Bittman's raw beet salad

I'm Russian, and thus I love beets. I love beets in borscht (soup), roasted in salads, or pureed with potatoes (beets add a sweetness to mashed potatoes and a pretty pink color).

I've never, however, tried raw beets. Never, that is, until trying a raw beet salad from Mark Bittman's How to Cook Everything Vegetarian cookbook.

And you know what? Raw beets are amazing! The flavor is sweet and fresh, the texture is crunchy. Definitely give this salad a try!

Ingredients & Directions:

1) In a food processor grate an equal amount of peeled beets and carrots, and a shallot (I did not have shallots, and used red onion instead).

2) In a bowl combine the following:

1 tablespoon peanut oil
2 tablespoon lime juice
1 tablespoon peeled, minced ginger
1/4 cup cilantro

3) Combine the dressing with beets, carrots, and shallots and enjoy
