The Central County Occupational Center (CCOC) is a day program providing career training classes for high school students and adults who reside within one of six participating school districts, including the Santa Clara Unified School District, as well as surrounding districts. Enrollment priority is given to high school students age 16 and older; adults may enroll for a fee if space is available.
The Spring 2010 schedule includes a core curriculum in Baking and Catering, in which students learn the ins and outs of operating a commercial bakery, with instruction in safety, measuring, tool identification,and recipe conversion, as well as basic cooking techniques. Through demonstrations and practice labs, students will gain hands-on experience preparing large quantities of various baked goods; and the class includes cake decorating. Students will learn catering, and be involved in the preparation of hors d'oeuvres, sandwiches, and salads. There are two sections to the course, which meets Monday through Friday during the day beginning January 20.
This semester's schedule also offers a Culinary Arts class, in which students learn all phases of the food services industry, receiving hands-on training in a student lab and in a commercial kitchen. This class is also in two sessions Monday-Friday during the day, also beginning January 20.
