Russian Tea Cake recipe (snowballs)

Several years ago, for Christmas, a neighbor from our development brought us a box of homemade cookies. Inside of that box were some of the best cookies I have eaten! These were one of the varieties that were inside. I asked her for this recipe and she gladly shared it with me. It was one of her Mother's recipes!
 

Jennifer's Russian Tea Cakes OR Snowballs

  • 1 Cup Margarine, room temperature
  • 1/2 Cup powdered sugar
  • 1 Tsp. Vanilla
  • 2 1/4 Cup flour
  • 1/4 Tsp. salt
  • 3/4 Cup chopped pecans (or walnuts)*
  • Powdered Sugar for rolling

Preheat oven to 400*.
With mixer, mix margarine, sugar and vanilla. Mix in flour, salt and nuts until dough holds.
Form into 1 inch balls and place 1 inch apart on cookie sheet (I line mine with no stick foil).
Bake 10-12 minutes until set, not brown.
Immediately roll in powdered sugar. Allow to cool and roll in sugar again.
* I make mine without the nuts!

    I love the Russian tea cake recipe. I've made it for years. The brownie trifle looks delicious as well. Keep up the good work.
