This is my mothers rice pudding recipe. It is simple to make and would be great if you added a handful of raisins to the recipe as well.
Moms Rice Pudding
- 5 cups water
- 1 cup white rice
- 3/4 can evaporated milk
- 1 cup milk
- 1/2 cup sugar
- Remaining 1/4 can milk
- 4 eggs, beaten
- 1 1/2 tbsp vanilla
- 1-2 tsp cinnamon
Cook rice in 5 cups water on the stove over medium high heat: until water is fully evaporated into rice.
Then add: 3/4 can evaporated milk and milk.
Cook for 10 minutes, stirring occasionally.
Add sugar, remaining 1/3 can milk, eggs and vanilla: mix well and cook for 10 minutes.
Add cinnamon and cool.
If you would like to add raisins, add 1/2 to 3/4 cup and add it into the mixture when you add the sugar, milk eggs and vanilla.
