Pineapple Poke Cake
- 1 box of yellow cake mix, prepared by package directions
- 1 can crushed pineapple
- 1/2 cup sugar
- 1 box vanilla or French vanilla instant pudding
- 12 ounces sour cream
- 1 tub cool whip
- 1 cup shredded coconut
Prepare the cake the night before.
Boil pineapple and sugar together, in a non-stick pot on the stove top.
Poke holes into the cake and spread pineapple mixture over the top.
Mix together pudding and sour cream.
Spread over pineapple mixture.
Top with cool whip and sprinke with coconut.
