Pineapple Muffins
- 1 ½ cups four
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 cup sugar
- 1 cup grated carrots
- 10 ounces crushed pineapples (1 can)
- 2/3 cup oil
- 2 eggs
Preheat oven to 350*.
Line muffin pan with paper muffin cups or spray with cooking spray.
In a large bowl, add all dry ingredients.
With electric mixer, blend carrots, pineapple, oil and eggs.
Slowly add in dry mixture.
Spoon into prepared muffin pan.
Bake for 20-25 minutes.
