
Growing up Italian and in New Jersey, we ate these cookies all the time! I decided I wanted to make them for my family and this is what I did:
Pine Nut Cookies
- 1 pack (4.9 oz.) almond paste, cut into pieces
- 1/3 cup sugar
- 1 egg white
- ½ tsp. vanilla
- 2 Tbsp. flour
- ½ cup pine nuts
Preheat oven to 325*.
Line cookies sheets with no-stick foil.
Beat almond paste, sugar and egg white.
Add vanilla.
Stir in flour until dough forms.
Drop by teaspoonfuls onto cookie sheet. Add pine nuts to the top of each cookie.
Bake for 12-15 minutes.
