Kolacky cookie recipe

 

Here is a recipe from Anita's Tried and True Recipes http://www.anitasrecipes.com/  After writing the article about Anita's website, I emailed her and asked if I could publish this recipe. It just looked so good in the picture!

 

 

 

Anita's Golden Kolacky

Adapted from Old Fashioned Christmas Cookies

36 servings

Dough:

  • 1 tbsp butter, softened
  • 1 c butter, softened
  • 1/2 c granulated sugar
  • 8 ozs cream cheese, softened
  • 1 tsp bottled lemon juice
  • 2 c unbleached flour

Apricot Filling:

  • 8 ozs apricot pie filling

Cream Cheese Filling:

  • 8 ozs fat-free cream cheese, softened
  • 1/4 c granulated sugar

In a mixing bowl, combine one cup butter, eight ounces cream cheese, and flour.

Mix until soft dough forms.

Divide dough in half and place each half in a separate bowl with lid. Refrigerate doughs until firm.

Preheat oven to 375.

Meanwhile, to prepare Cream Cheese filling, combine remaining cream cheese, butter, sugar, and lemon juice. Mix well and set aside. ( There will be extra cream cheese filling. I froze the extra for a another time).

Roll half dough out at a time, on floured surface to 1/8" thickness. Cut into 3" squares.

Spoon one teaspoon of Cream Cheese filling or apricot pie filling in center of each square.

Bring opposite corners to center; pinching tightly together to seal edges.Fold sealed tip to one side; pinch to seal edges again.

Lightly brush with water and sprinkle each with 1/4 teaspoon sugar.

Place 1" apart on to unprepared baking sheets.

Bake for 10 to 15 minutes, or until lightly brown on top.
