Easy hummus on cucumber recipe

 

Need a quick and easy snack that is good for you? This is perfect! You can put the beans in the blender or smash by hand with a fork if a blender is not handy.

 

 

 

Hummus on Cucumber Snack

  • 1 can garbanzo beans, reserve juice
  • 1 tbsp lemon juice
  • Salt
  • Pepper
  • 1 cucumber, sliced

First, slice cucumber into round slices. Be sure to cut them thick enough so they can be picked up without bending.
Lay the out onto a large plate.

In blender or bowl put beans, lemon juice and some reserved bean juice. Blend or smash with fork.
Add salt and pepper to taste.

Spoon hummus onto each cucumber round…just enough to cover. Gently press down with spoon.
