This recipe has been adapted from a fiction novel entitled, “The Great Christmas Bowl”. This is a great soup to make on a cool day!
Clam Chowder
- 8 pieces of turkey bacon cut into small pieces before browning
- 1 medium onion, finely chopped
- 3 stalks celery, chopped
- 4-6 potatoes, diced
- 3-4 cups water, boiling, to cover potatoes
- 1 ½ cups milk
- 2 ½ cups half and half
- 1 can minced clams, 6 ounces
- Salt and pepper, to taste
Brown bacon until crisp. Remove bacon from pan, leaving grease behind.
Brown onions and celery in bacon fat.
Add water, salt, pepper and potatoes. Cook until potatoes are fork tender.
Mash a little bit in the pot for a thicker soup.
Add clams with juice.
Heat milk in microwave until boiling then add to soup.
Add half and half.
Add more salt and pepper to taste.
