The original name for this recipe was "Coconut and brown sugar strusel topped muffin cobbler". What a mouthful! "Easy blueberry coffee cake" is much easier to say and remember. It is a partly homemade recipe but still has all the tastes and flavors of being made from scratch.
Easy Blueberry Coffee Cake
Cake
- 1 pouch (Martha White) blueberry muffin mix (Any flavor can be used)
- 1/2 cup milk
Strusel Topping
- 1 tbsp margarine, melted
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup shredded coconut, processed into crumbs
Preheat oven to 350*.
Line an 8x8 baking pan with no-stick foil.
Mix cake ingredients together in a bowl by whisking until smooth. Pour into prepared pan.
Combine all ingredients for topping together and mix until crumbly. Sprinkle over cake layer.
Bake for 27 minutes or until fully baking in the center.
