Easter candy

Every year my son and I make caramel candy for Easter. This recipe is GREAT to make with children. It is super easy and the extra hands to unwrap the caramels are a big help! If you like to make treats to send to family, these candies do ship well. These candies could definitely be made for any Holiday or occasion.

 

 

 

Caramel Easter Candy

  • 24 soft caramel candies, unwrapped
  • 1/2 cup peanuts
  • 1/4 cup (or a little more) white chocolate chips
  • 1 1/4 cup shredded coconut
  • Cooking spray

Line an 8x8 baking dish with non-stick foil.

Spray a microwavable bowl with cooking spray.

To bowl add caramels, nuts, chips and 1/2 of coconut. Stir.

Microwave for 1 1/2 minutes. Stir. Micro for 30 seconds more. Stir. Micro 30 seconds more.

Place mixture into foil lined dish.

Sprinkle remaining coconut over mixture and press down with a spatula. Cool. Cut into 1 inch squares.
