What a southern treat! Prior to moving to Raleigh, NC, I never tried this corned beef spread. A special friend of mine, who lives in Raleigh, NC made this for me and in turn I made it for my family. It quickly became a family favorite!
Peggy's Corned Beef Sandwich Spread
- 1 can corned beef
- 1 celery stalk, diced
- 2 eggs, boiled and diced
- 3/4 to 1 cup mayonnaise
- Pepper, to taste
Open corned beef and place into a medium sized bowl.
With a fork, separate the meat and remove any fat.
Add celery, eggs, mayo and pepper.
Mix until well combined.
Store in refrigerator, covered, up to one week.
Serve on sandwiches.
