
So, you have eaten corn on the cob, cream corn, corn casserole, but have you ever tried a corn salad? This recipe is for a creamy corn salad that is eaten cold.
This is an easy recipe that is great as a side dish to accompany any meal. It is also a great dish to bring to a pot luck or picnic event!
Corn Salad
- 2 cans (12 oz.) corn, drained
- 2 small tomatoes, chopped
- 1/2 of a small onion, chopped
- 1/4 cup sour cream
- 2 tbsp. mayonnaise
- 1 tbsp. vinegar
- 1/2 tsp. salt, pepper and garlic powder
Combine corn, tomatoes and onions in a bowl.
In another bowl mix, sour cream, mayonnaise, vinegar and spices.
Toss mix with vegetables.
Refrigerate for a minimum of 3 hours.
