If you are looking for a healthier muffin recipe, try these bran muffins. You can always add nuts for more texture and flavor.
Bran Muffins
- 1 cup flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1/2 tsp salt
- ¼ cup unsweetened applesauce
- 2 tbsp margarine, room temperature
- ¼ cup brown sugar
- ¼ cup honey
- 1 egg
- 1 cup milk
- 1 ½ cups wheat bran
- ½ cup raisins or dried cranberries
Preheat oven to 400*.
In a large bowl, mix: flour, baking powder, baking soda and salt.
With a mixer, mix: applesauce, margarine and brown sugar.
Beat in: honey and egg.
Add milk.
Add wheat bran.
Add in flour mixture.
Lastly, add in raisins.
Spoon mixture into muffin pan. (You can use paper muffin cups or just spray the pan with cooking spray.) Bake for 20-25 minutes.
