It's fall and with this time of changing leaves and weather comes time for apples! If you live in the Raleigh, NC area, a great place to find fresh apples is: The Fresh Market.
Here are some easy recipes that use apples as the main ingredient:
Easy Baked Apples
- 1 apple
- 10 raisins
- 1 tbsp brown sugar
- 1 tsp butter, unsalted and room temperature
- 1/2 cup water
- 1-2 shakes of ground cinnamon
Slice the top off of the apple.
Cut out the core.
In a bowl, mix together raisins, sugar and butter.
Place apple into a microwave safe bowl.
Spoon mixture into the apple.
Sprinkle with cinnamon.
Pour water around apple, into bowl.
Cover loosely with plastic wrap, leaving openings for steaming.
Cook on high for 3 minutes.
Check apple, if it is soft, remove and eat. If not, put back in for 1 minute and continue until soft.
Easy Apple Crumble
- 4 apples, peeled and cut into bite size pieces
- 1 box yellow cake mix
- ½ cup brown sugar
- 2 tsp. cinnamon
- 1 stick of butter, softened
Pre-heat oven to 350*.
Combine apples, cinnamon, sugar in a bowl.
Cover mix with enough cake mix to coat.
Place mix into a 9x13, buttered pan.
Mix butter into remaining cake mix.
Spread mix over the top of apple mix.
Bake until mix is golden brown, 15-20 minutes!
Eat warm or serve cold!
Add ice cream or whipped topping for an extra special touch.

Apple Cinnamon Bread
- 3 ¾ cups flour
- ½ tbsp salt
- 2 ¼ cups sugar
- 2 tbsp baking powder
- ½ cup butter, cold and cut into pieces
- 2 eggs
- 4 small apples, peeled, cored and chopped
- 2 small (4 ounce) snack cups of applesauce
- 1 cup milk
- 2 tsp cinnamon
- Cinnamon sugar
Prepare loaf pans by spraying with cooking spray and coating with cinnamon sugar.
Preheat oven to 350*.
In a large bowl add: flour, salt, sugar and baking powder.
Mix together well.
Add 1 cup of mix and butter into food processor and process until blended well.
Add butter mixture back into large bowl with remaining dry mix and mix together well using a whisk.
Add eggs, apples, applesauce, milk and cinnamon to the mix and mix until well combines. If it is too thick, you can always add a dab more milk.
Pour mixture evenly into pans and sprinkle with more cinnamon sugar.
Bake for 55 minutes to 1 hour.
