Healthy spin on an Italian classic!
You'll need:
-1 lb lean ground turkey
-1 tablespoon Italian seasoning
-3 tablespoons liquid egg white (or 1 large egg)
-2 tablespoons grated Parmesan cheese (use the pre-grated "powder" kind)
-Extra Virgin Olive Oil (EVOO)
-1 box whole wheat pasta (your choice, I used rotini)
-1 small can tomato paste
-1 large can crushed tomato
-1 tablespoon minced garlic
-1 tablespoon Italian seasoning
-1 small zucchini sliced thin
-1 1/2 cups fresh baby spinach
Turkey Meatballs:
In large bowl combine, turkey, egg white, Italian seasoning, and Parmesan cheese. Mix well with hands until all ingredients are combined. Form turkey mixture into small balls and place in baking dish. Once balls are made, drizzle with EVOO and place in pre heated 350 oven for 15 minutes.
Mean while, cook pasta according to box or liking, drain and set aside.
For sauce:
In large skillet, sauté garlic, zuchinni, and spinach. Once spinach has reduced, add tomato paste, canned tomato and Italian seasoning. Allow to simmer slowly, and add turkey balls to pan. Cover turkey balls with sauce, and cover pan. Allow turkey balls to simmer and continue cooking through.
Once done pour over cooked pasta!
