Refreshing Summer dish, perfect for a casual dinner or last minute weekend gathering.
You'll need:
-4 to 6 white fish fillets (I used Tilapia)
-1 lemon
-Extra Virgin Olive Oil (EVOO)
-Sea Salt and Black Pepper
-1 box White Corn Taco Shells
-1 container store made salsa
In a shallow baking dish, prep fish with a drizzle of EVOO, juice of 1 lemon, and a pinch each of sea salt and pepper. Place fish in pre-heated 350 oven and bake for 15 minutes or until fish is cooked through and flaky.
Set cooked fish aside to rest, and follow heating directions on taco shell box.
Assemble tacos by placing shredded pieces of fish in shell and topping with a hearty spoonful of fresh salsa.
This dish pairs perfectly with white wine, Sangria, or an ice cold beer!
