A classic peanut butter and banana sarnie in honor of Elvis' 75th Birthday
Elvis is one of my all-time musical heroes, and since 8 January is his birthday -- he would have been 75 today -- I decided to create my own version of his favorite food, a fried peanut butter and banana sandwich.
Ingredients:
4 slices English muffin bread
1 banana (medium ripe)
4 tbsp salted butter
2tbsp brown sugar
4 tbsp creamy peanut butter
Preparation:
In a large cast iron skillet heat 2tbsp melted butter
Slice banana into hot butter
Sprinkle the brown sugar evenly over the bananas
Fry for 3-4 minutes, turning once, till banana is brown and crispy
Remove banana slices from pan and set aside
Add 1tbsp butter and lightly fry the bread
Turn and add 1tbsp butter to fry the other side
Remove from pan
Arrange slices from ½ banana on each of two slices of bread
Cover the two remaining slices with 2tbsp peanut butter each
Make a sandwich and scoff!
Serving suggestion: Dress with a drizzle of caramel sauce, or serve alongside a scoop of rich vanilla ice cream, for a real waist-line busting treat.
