Eggplant fries - baked crispy goodness and the kids loved them


Eggplant is SO GOOD!

I wanted to share something fun you can do with eggplant that meets both the healthy and "kid-friendly" food categories:  Oven Baked Eggplant Fries

I made this yesterday and they were gobbled up in minutes. 

Oven Baked Eggplant Fries
1 medium eggplant
1/2 cup fat free Italian Salad Dressing
1 pat butter, melted in a large bowl
1 cup plain store bought bread crumbs
salt and pepper as desired

Preheat oven to 425 degrees.  Melt butter in large bowl and mix in the Italian dressing.  In another large bowl, pour in bread crumbs and salt and pepper to your liking. 

Spray a cookie sheet or pan lined with foil with non-stick spray.  Once all of these tasks are done, you can peel the eggplant. 

Once the eggplant is peeled, cut into sticks similar in size and shape to pre-cut carrot sticks.  They don't have to be perfect.  Completely coat the eggplant sticks with the butter/Italian dressing mix and then into the breadcrumbs. 

Put on cookie sheet and bake at least 40 minutes.  (I tested them at 30 minutes and they were still a little "chewy.")  Test again at 40 minutes - mine were then crispy on outside and moist on inside.  I served our with ranch dressing and ketchup.  Marinara sauce would be good, too.

    Sounds delicious. My wife and I made grilled eggplant yesterday and it was great. We brushed it with oil, sprinkled on some black pepper and salt, and grilled it on the upper rack. Eggplant is in season and the markets are full of really fresh, delicious eggplant. I strongly recommend male eggplants over female eggplants, because the females can be bitter. You can tell the males from the females because, on the opposite end from the stem, the males have a round indent and the indent is shallower. The females have an indent that looks more like a dash.
