Semi Homemade Cupcakes

Cupcakes are big right now...huge.  (I am resisting the urge to say how funny that is since they're small.  No really, I'm not going to mention it.)

They star in their own television show, they make millions of people happy every day, and there is a cupcakery appearing on every street corner.  And you know, it's totally cool!

Why not?  Cupcakes are amazing.  People are getting so darn creative with them and they are trying so many different flavors, it's no wonder everyone loves them.

To analyze this trend, I did a survey of cupcakes over on FabulousFoods.com, talking to two cupcakeries SugarMama's in Kansas City and Nene Takes the Cake. Check it out to find out what's hot in cupcakes.  Other than cupcakes themselves.

Also, if you want to be trendy (or just want a good dessert), you can make your own cupcakes.  To show how easy it can be to get creative with them, here is a recipe from Renee Kloeblen of Nene Takes the Cake which uses a store bought mix and then takes it to the next level.

Orange Dreamsicle Cake

Ingredients

  • 2 Eggs
  • 1 regular sized vanilla cake mix
  • 1 can Orange soda pop
  • 2 packages Jell-O Orange
  • 1 package instant vanilla pudding mix
  • 1 cup milk
  • 2 cups water
  • 1 tsp. vanilla extract
  • 8 oz Cool Whip Whipped Topping
  • InstructionsMix cake mix with orange pop and eggs. Spray 9X13 cake pan with cooking spray, pour batter into pan. Bake 20 -30 minutes at 350°F.

Directions

  1. When cake is done, poke holes in the cake with fork sprayed with cooking spray. Mix 1 package of orange jello in 1 cup hot water until dissolved. Add 1 cup cold water. Pour entire mixture over cake. Refrigerate for at least 2 hours.
  2. Mix Vanilla pudding mix and other pack of Jell-O together (dry). Add 1 cup of milk and 1 tsp. vanilla.
  3. Mix well. Blend in Thawed cool whip. Use this mixture to frost cake.
  4. Keep cake refrigerated.
