We have all heard that saying, “I scream, you scream, we all scream for ice cream.” Children and adults alike have all repeated these words at one time or another. Why not? Ice cream is a treat that everyone from all age groups enjoy.
Pecans are the nut of the South. They are available all year round. One can find them in Winona at the grocery store as well as the Bass Pecan Company in Madison, Ms. The company has been in business for over 100 years. Some of the items for sale are: flavored pecans, pecan candy, gourmet jellies, jams, syrups as well as natural pecans.

Ingredients:
- 5 cups of milk
- 4 cups of whipping cream
- 2 cups of sugar
- 4 eggs (beaten)
- 5 teaspoons of vanilla
- 1/3 cup of brown sugar
- 2 ¼ cups of chopped pecans
- ¼ cup of butter
- ½ teaspoon of salt
Directions:
- In a large mixing add the granulated sugar and gradually add the eggs a little at a time.
- Beat eggs and sugar together until stiff.
- Next, add the whipping cream, vanilla, salt and milk to the bowl.
- Mix the ingredients well.
- Place the bowl in the refrigerator till later.
- In a medium sized sauce pan or frying pan add the butter and when it is half way melted add the pecans to the pan. Sauté the nuts for about 3 minutes; stirring the entire time the nuts are warming.
- Now add the brown sugar to the pan and allow the sugar to melt. Stir butter and sugar until it has all been liquefied. Then, add the nuts and stir until thoroughly mixed.
- Allow mixture in frying pan to cool completely.
- Remove bowl from refrigerator and add the two mixtures together. Stir until they are all incorporated.
- Place in a covered container and place in the freezer.
- Allow butter pecan ice cream to completely freeze before serving.
- This recipe should make approximately 1 gallon of ice cream.
- Enjoy!
