Everyone is looking for ways to reduce calories and still enjoy entertaining with friends during the holidays. A SkinnyTini is a low-calorie cocktail with all the style and taste as a regular cocktail. Teresa Howes is the creative author and CEO of SkinnyTinis. Women across the country are throwing SkinnyTini parties with their girlfriends for a "Girls Night In" and a hubby volunteers as chauffeur. It was a delight to meet her and she shared this recipe for Pure Sunshine. Cheers!
Pure Sunshine
2 ounces citrus vodka
1 1⁄2 ounces light lemonade
1 ounce light orange juice
1⁄2 ounce mango nectar
Orange wheel, for garnish
Add all ingredients except the orange wheel to a cocktail shaker with ice and shake for 10 to 15 seconds. Strain into a 5-ounce martini glass and float an orange wheel on top as a garnish to resemble the sun.
Skinny Tidbit Pure Sunshine, just as the name implies, is wonderfully bright and energizing. Be sure to chill the mixers and/or shake with ice extra-long to ensure it’s ice-cold and refreshing and to reveal its cheerful, crisp taste.
