Strawberry Memorial Blueberry Recipe

 

Unlike most people I’m staying home this weekend. I’m not going out of town, not braving a tent, or searching for the perfect worm to catch the perfect trout, and NOT spending hours around cousin Fred hat I haven’t seen in five years. I’m spending Memorial Day at home, with my family. As tradition speaks we usually go to a BBQ or picnic or have one at our home. We generally take a dish or potato chips and a beverage, usually in the fermented kind, after all what is Memorial Day without food, beverages, family and friends.

As tradition goes Memorial Day is the first holiday for gatherings for the summer, but what is Memorial Day? It was actually started in the late 1800’s as a memorial for our fallen soldiers and loved ones. So in the Memorial Day tradition my dish is going to be an easy shortcake.

Strawberry shortcake with blueberries

1 lb of fresh strawberries cut into ¼’s without the tops ½ lb blueberries cooked over med temp with 1/3 cp sugar, don’t cook long, just long enough to dissolve sugar and not break down blueberries, you want bbs to be still hard and refrigerate them at least ½ hour before serving
Angel food cake bought at store
Strawberry gelatin cooked like bbs over low temp with strawberries mixed into gelatin and cooked over very low temp
Whip cream in spray can
Layer strawberry gelatin over angel food cake in individual servings, don‘t cover the whole cake as it will turn into mush, keep everything separate. Put a large dollop of whip cream and garnish with cold blueberries. Red, white, and blue the perfect Memorial Day desert. Serve right away as individual servings, if you let it sit out the cake will get soaked and turn into mush. Happy Memorial Day!

Recommended Beverage for Memorial day

Strawberry Daiquiri

You’ll need a blender
A handful of strawberries tops off
Sweet and Sour Mix
1 shot Rum of your choice (white)
Splash of Rose’s Lime
Splash of Triple Sec

Place all ingredients in blender except S&S, cover the ingredients with S&S until just covered. Add ice until it covers the top of all ingredients, add more ice as needed, crushed ice from the store works best. Blend until it has the consistency of a slushy from 7-11. Garnish with a fresh strawberry on a sword or toothpick stuck down the center.
