Perfect Pancakes and A Kids dream Buffett

 

I like found recipes that work and I use time and again, even though they aren’t mine. I had been using this recipe for pancakes for years and it was working ok but the cakes just weren’t the way I really wanted them. Boxed pancake mix is just plain nasty tasting so I went on a search for the perfect pancake recipe. About a year ago I found a recipe for pancakes in a Betty Crocker cookbook and found these to be much better, they are so easy and with a little adjustment they are perfect. I wanted to share that recipe with you plus a couple of hints on cooking the perfect pancake.

Betty Crocker Pancakes

1 egg
1 c flour
¾ c milk
1 tbsp sugar
2 tbsp veg oil
3 tsp baking powder
½ tsp salt

Mix by hand. I have found this recipe to be a little thick so add a little more milk than the recipe calls for. In a non-stick pan over med heat add about tbsp oil and let heat. Using a ladle, ladle in one and 1/8 scoop of batter. Leave it alone and allow to cook until the sides begin to fluff and the center looks pock marked, gently work spatula around the sides and carefully flip over. Using spatula edge, puncture a slice in center of cake, this allows for even cooking and assures center gets cooked. Wait about a minute flip over and place in warm oven to hold until ready to serve.

Serve with strawberries or blueberries and whipped cream. Or better yet set up a little pancake buffet for the kids complete with paper plates, sausage and bacon and a variety of fruits, chocolate chips jellies, syrups and other fun toppings and let the kids fix themselves. This is great for the next day after your child has a sleep over, and the kids eat it up literally.
