This is another one of my easy breezy recipes. Mind you I love to cook but sometimes I just like to keep things simple. So when I think simple I also like to think homemade taste. I have been cooking this recipe for years and it’s always a hit. The chicken comes out fall apart tender and yum yum!

Mushroom Chicken Balsamic Style
- Boneless chicken breasts (1 per person and a couple of extras just in case)
- Cream of mushroom soup
- Onion
- Celery
- Mushrooms
- Balsamic vinegar
- Oregano
- Basil
- Garlic Minced
Place chicken in a skillet and cover with water. Cover and parboil over medium heat turning every so often until done. While the chicken is cooking prepare the sauce. In a pan put in cream of mushroom soup with about ¼ cup of water, whisk and with a lid on bring up to a med heat. Cut onion into ½ then ¼ each half, this will give you larger slices than dicing. Cut celery into slices and place onion and celery into pan with soup and allow to heat through. Add chicken, sliced mushrooms, garlic, balsamic, basil and oregano to taste. Stir and make sure chicken is submerged completely in sauce. Cover and allow to simmer over low for about 20 minutes. Your chicken should be tender and soft and the aroma from the combined spices with balsamic is to die for.
I like to serve this with a salad and toasted garlic bread. The meat is a heavy meal so I try to make all my sides light. This is something to keep in mind if you are wanting to eat healthy and watch your waste line. It’s ok to have a heavy dish like this once in a while, but I don’t recommend serving heavy dishes with mashed potatoes and gravy. You might as well sit and watch the button pop off your pants when your done eating.

Toasted Garlic Bread
- One loaf of French bread
- Butter
- Minced Garlic
- Oregano
- Basil
Cut loaf into slices. Line a baking pan with tinfoil, this will help prevent burning. Spread a good amount of butter evenly over one side of each slice. Put one small scoop of minced garlic evenly over each slice and sprinkle with basil and oregano. Toast in 400 degree oven. Each oven varies so keep a close eye on it, check every couple of minutes by touching the sides and center. Should be crisp outside and slightly toasty in center. If you cook this and it’s too crisp bring the temperature down next time and mark what temp you cooked your bread at, each oven cooks differently, mine runs a little on the hot side.
