As parents we are always looking for food that our kids love to eat, that’s easy to fix. I have a couple of recipes that have never failed to please my daughter and my husband.
Both are relatively quick, both are so easy even the cooking challenged should be able to do.

Cheesy Tater Casserole (Courtesy of a friend in college, Todd Chaffey)
- Bag of tater tots cooked per instructions on bag
- Mac and Cheese cooked per box instructions
- Cream of mushroom soup uncooked
- Frozen Peas thawed uncooked
- Grated cheese of choice I use a white cheese like provolone
- Parmesan
In a large square casserole dish, layer from bottom to top-cooked tater tots, place Mushroom soup on top and spread evenly over tots. Next layer thawed peas and on top of that spread mac and cheese. Finish with grated cheese. Place in 350 degree oven and keep an eye on it until top of cheese is bubbly and soft. Pull out of oven and let sit for about five minutes, cut into squares and top with parmesan. Serve with chunks of fresh watermelon.

I’d Like Some More Peas (couldn’t tell you where I got this recipe)
- Mac and Cheese cooked per box instructions
- 1 can of Tuna (in water not oil) drained
- Frozen peas
After mac and cheese is cooked over low heat add peas, stir to get them cooking. Add tuna, stir well, cover. Stir often so it doesn’t stick-should be done within a couple of minutes. Serve with a small salad.
Drink suggestion:

Strango Slush
Crushed Ice
OJ
Fresh Strawberries
Couple splashes lime juice
Pineapple chunks
½ and ½
Milk
OJ about 1/3 full in blender. Top with a little ½ and ½ and a little milk, eyeball it. Add splashes of lime juice, and throw in fruits until blender is about ¾ full. Blend. Mixture should be about ½ way full in blender, if too much pour off some and reserve in fridge, if not enough add more fruit. When mix is ½ way full in blender add ice in hand full until it has the consistency of a margarita or daiquiri. Place in a chilled glass with a straw (I grab a few extra straws when I eat at fast food restaurant and throw in a drawer for later) and whole strawberry cut half way up middle from the bottom on edge of glass for garnish.
