Here's a brownie recipe that embraces coffee like a lover, yet requires little effort since it's made from a box mix. It's fast, too. Start to finish, you can be wolfing down a hot, gooey brownie in half an hour. A recipe for coffee icing follows.
Easy cappuccino brownie
1 (18.3 oz.) package brownie mix
2 tbsp instant coffee
1 tsp ground cinnamon
2 eggs
1/3 cup brewed coffee, cooled
1/3 cup vegetable oil
Preheat oven to 350F.
In a medium bowl, combine brownie mix, instant coffee, and cinnamon. Add eggs, oil, and brewed coffee. Stir until combined. Pour batter into greased 9 x 12 pan. Lick bowl if desired.
Bake according to package directions. Test for doneness with a toothpick. Eat warm with a glass of milk, or restrain yourself and let them cool. Once cool, drizzle with coffee icing if desired. A dusting of powdered sugar will work, too.
Coffee Icing
1/8 tsp instant coffee, ground fine (You can smash it up in a bowl with a spoon.)
1 cup powdered sugar
Enough heavy cream (or milk) to make an icing consistency
A tasty alternative: Reduce the amount of instant coffee to ½ tbsp and add 1 ½ tbsp of any General Foods International Flavored Coffee.
