Get ready for one of the easiest candy recipes ever! These are so easy and so good! Some of these candies (in the picture to the left) are the chcocolate covered raisins and others are chocolate covered cookies. Can you pick out which are which? Hint: look to the back and to the right for the chocolate covered raisins :-)
Chocolate Covered Raisins
- 1 bag semi sweet chocolate chips
- 2 cups raisins
Line 2 cookies sheets with no-stick foil.
Melt chocolate on medium/high heat in a double broiler on the stove.
When melted remove from heat and add raisins.
Scoop by tablespoonfuls onto prepared pans.
Place in refrigerator for 15 minutes, until hard.
Remove to an air tight container and store in refrigerator until ready to serve.
These also freeze well for several months.
- You can always add to or take away from the called amount of raisins.

I never thought of making my own. Yum!
as the author of a new book on chocolate (released during the holiday season) i just had to try a version of this. a few weeks ago, i used dark chocolate chips, 60% cacoa content (don't go lower); and white chocolate chips (boasts calcium but not all the good compounds in dark chocolate)...dipped fresh apples, apricots--and dried ones too. i used the microwave. either melting method works. it's amazing how good and healthful these little gems can be.
