Low-Carb Delite Stuffing
Ingredients: 1 large cauliflower, 1/4 teaspoon each garlic salt, thyme, sage, rosemary; calorie-free/carb-free butter spray; 1 to 2 slices low-carb bread (leave in open air until it is dry). 1 can chicken broth (check ingredients: make sure it contains no sugar)
Directions: Remove all leaves and core from a large fresh cauliflower. Steam until soft. Mash until it has the consistency of mashed potatoes. Mash in all spices. Tear up bread into tiny bread-stuffing-size pieces or cubes and stir into cauliflower. Add several sprays of butter spray, and stir in chicken broth. Bake in a casserole dish at 375 degrees until the top is browned and bubbly (tip: if you like cheese, you may want to top with low-carb very thinly sliced mozzarella or Monterey Jack cheese - make sure it melts completely but does not overbrown).
