Honey-roasted almonds are a delicious, protein-packed treat for on-the-go munchers. Pass up the vending machine money-sink and bring small bags of these cost-efficient nuts to work, school or anywhere else this September to celebrate National Honey Month.
Honey Roasted Almonds
6 cups raw almonds ($4.00)
1 cup raw honey ($1.63)
4 tbsp butter, melted ($.06)
1/8 tsp cayenne pepper, powdered ($.01)
1/2 tsp cinnamon, powdered ($.01)
salt to taste
1. Toss all ingredients except salt in a small bowl.
2. Spread coated almonds in a single layer on a cookie sheet.
3. Toast almonds in 350 degree oven 5-10 minutes, checking frequently to make sure almonds do not burn. Almonds are toasted when fragrant!
4. Remove toasted almonds from cookie sheet immediately and sprinkle with salt to taste.
5. Store nuts in an airtight container or bag.
Recipe makes 6 cups for $5.71!

Wow, a honey roasted almond recipe that uses honey and NO SUGAR. Exactly what I was looking for. I made this and it was very good. I baked for 12 minutes, which is a bit longer than the recipe calls for. Also, I let the nuts cool completely on the parchment paper before removing. Otherwise the nuts stick together.
