Each week I plan on featuring a different Bismarck cook. Today's recipe comes from Megan Rosten, who cooks for her family of five, and has taught me a thing or two about budget cooking.
Zuppa Toscana is a rich, comforting soup, very similar to a soup served at the Olive Garden. With this recipe though, you can feed your entire family for about what it would cost you to place one order of soup, salad and breadsticks at lunch.
Loaded with nutrient rich potatoes and kale, it is easy to ignore the high fat content of the sausage and bacon for one meal! I recommend that you follow Megan's suggestion and serve the soup with some nice, crusty french bread.
