There is much grumbling going on that those who are living with government food aid cannot afford to live on only $7 a day for food. With good planning and wise shopping, many families can eat on less than they think that they need. This beef stew is brimming with good, hearty meat and vegetables, and is filling and comfortable. All of the ingredients can be purchased for under $10.
The beef for this stew came from a markdown bin at the grocery store. It was going to go out of date the next day. I purchased the 1.5 pound package of chuck steak for $4 vs. the $7 price tag, The mushrooms were on sale for $1.88 for an eight ounce package, the onion was $.68, the carrots were $1.50. The potatoes were from a 10 pound bag that was purchased for under $5. The wine was leftover from a dinner earlier in the week, and was well under $10 for the bottle, but could just as easily be left out. The butter was purchased on sale for $1.50 a pound and I used only a few tablespoons.

We really enjoy this and it is a go-to type of recipe...you can throw in other leftover veggies as well. I like to keep the seasoning simple, just salt and pepper, but a little bit of thyme is yummy too! Let me know how it goes over in your house!
