Diabetics sometimes think in terms of foods they can't eat or favorites they have to eliminate from their diet. A new cookbook published by the American Diabetes Association may help change that way of thinking.

The Diabetes Seafood Cookbook: Fresh, Healthy, Low-Fat Cooking has over 150 recipes designed for healthy eating without skimping on flavor. Author Barbara Seelig-Brown is the host of Stress Free Cooking, and she brings the same philosophy to these healthy seafood recipes.

Even seafood novices can feel confident of their results. There is an introduction that explains the basics of buying and storing seafood, and the recipes are easy to follow. The chapters are also arranged so that cooking techniques, sauces, marinades and side dishes are easily interchanged for even more variety. There's even a chapter called "Rounding Out the Meal" that includes side dishes and serving suggestions.

More importantly, the dishes meet the nutritional guidelines of the American Diabetes Association. Each recipe lists caloric exchanges, and breaks down fats, carbohydrates, sugars, and proteins in each dish, making it easy to keep track of what you're eating.

All in all, The Diabetes Seafood Cookbook is an excellent choice for anyone trying to stick to a healthy eating plan.
