Grocery Rant and Guacamole

Sheesh! I'm blown away every time I go grocery shopping lately. Granted, I have a house full of particular picky pants eaters, myself sometimes included, so we can't just eat any old crap. The stuff that really gets us is the soy yogurt, which the girls eat barrels of, the brown rice cheese we always have around in lieu of the real stuff, and a few other choice items that are hard to find in abundance just anywhere. The Whole Paycheck grocery store, you know what I'm talking about, is just brutal. But you know what? So is Gigantic and Stupid Fresh. They're all expensive now. You can't buy food and just let it go bad (not like in the old days... I'M KIDDING!!! Don't waste food.), especially when it costs an arm and a leg.

I try to construct tasty meals out of basic ingredients that are always around the house. Like the rice and beans recipe I posted a few weeks back-- the stuff is already here, it is not perishable, and is easy to put together in a short amount of time. The fresh stuff that goes with it, you can have salsa, guacamole, cheese (real or fake), some kind of meat thing, is all optional, and easy to prepare.

How 'bout a simple, deelish guacamole recipe for your taste buds? It is a perfect compliment to burritos, rice and beans, your own version of nachos, or really, anything. Something light to nibble during the warm summer evenings. Guacamole with some thick tortilla chips and beers, or seltzer water with fresh lemon or lime...mmmm.

GUACAMOLE
serves 2-4 people, or more, just add more of everything!

Ingredients:
  • 2-4 ripe avocados
  • fresh cilantro
  • fresh lime or lemon
  • olive oil
  • sautéed onions
  • raw or sautéed garlic
  • fresh ground black pepper
  • salt

Directions:
  • mash to your liking 2-4 ripe avocados (ripe=skin dark, flesh gives a little to your touch) with fork
  • add a tbsp extra virgin olive oil (or whatever olive oil you have around)
  • salt and ground black pepper to taste
  • juice half a lime or lemon
  • mix in your sautéed onions and raw or sautéed garlic (half an onion, a few-- 2, 3, 4... cloves garlic)
  • chop up a good chunk of fresh cilantro

You can add a dollop of a favorite salsa or a fresh, locally grown, in-season tomato if you like, but this is a good Guacamole base without it. Bon appetit, peoples!
