Neufchâtel Nightmares

Dairy is tricky business. Almost everyone in my house has issues with it. My husband cannot ingest a drop, sometimes can't even eat food that's been shared with dairy equipment without becoming quite sick -- and slightly disoriented! My youngest (by six minutes) daughter becomes bloated and miserable with dairy intake. I have sinus and upper respiratory reactions, randomly, when I ingest dairy for a couple days in a row. Phlegm, oh the phlegm. Somehow my eldest (by six minutes) daughter seems fine with it, but doesn't eat much because it's just not around.

Two nights ago, after a long hiatus from eating dairy products, I plopped a few chunks of buttery Havarti cheese in my dinner salad. Tasty? Oh yes. But I suffered. Not from physical reactions, but from one of the most disturbing dreams I can remember having recently. This one was a doozey. Without going into too much detail, I died from some random gunshots and was having conversations with loved ones before I left this plane of existence. Simultaneously, I was filming a 70's RV/camper driving down a sun bleached road, while the driver and passenger were smoking pot, behind a pack of people who were trying to lose weight. I woke up and asked my husband if I was dead. He told me I was not dead. But I digress.

Gillian from Scotland told me that eating too much cheese before bedtime can give you nightmares. This was news to me. I have to say, tho, that I have had this experience a few times since she mentioned it. After a quick look around online on cheezy nightmares it seems scientifically to be a myth. I like the British Cheese Board’s article and research on the subject. Of course, they only gave their subjects British cheeses. Maybe the real culprit was the Scandinavian cheese I ate. No disrespect, by the way, Denmark. I have real respect for y’alls.

I’m seriously considering giving it up altogether, the queso, kaas, what have you. CONSIDERING. Perhaps I can make a monthly exception for my wine and cheese book club meetings.
