
Cinnamon Sugar Waffles with Honey Whipped Cream and Fresh Blackberries
Everyone should have a great go-to recipe for waffles. One that isn't fussy to make and turns out delicious results every time is an added bonus. This recipe is a keeper and can be easily adapted to change around the flavors according to your tastes.
A sprinkle of cinnamon-sugar mixture over the batter just before baking is an extra special touch. Top it off with some quick honey whipped cream flavored with a little vanilla and add some fresh blackberries and a quick dash of confectioners' sugar and you've got an easy and impressive breakfast. The perfect idea to serve as a breakfast-in-bed treat for someone special.
Cinnamon Sugar Waffles
Makes approximately 8 8-inch waffles
Heat waffle iron to the desired setting.
In a large bowl, beat together the following:
2 large eggs
1 3/4 cups buttermilk
1/2 cup melted and cooled unsalted butter
1 tablespoon pure vanilla extract
In a medium sized bowl, whisk together the following:
1 3/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
To make the cinnamon-sugar:
In a small bowl, whisk together the following and set aside:
1/4 cup sugar
2 teaspoons ground cinnamon
Add the dry ingredients to the wet ingredients in the large bowl and whisk or stir till combined and just smooth. Lightly oil your waffle iron with spray oil if needed. Scoop enough batter into your waffle iron to spread evenly according to your waffle iron's size. Quickly sprinkle about a teaspoon of the cinnamon-sugar mixture over the batter, then close your waffle iron and cook according to your iron's directions. Serve hot with desired toppings - honey whipped cream (recipe below) and blackberries or just maple syrup are both delicious.
To garnish:
Honey Whipped Cream (recipe below)
1 pint fresh blackberries
Confectioners' sugar, for dusting
Honey Whipped Cream
1/2 cup heavy whipping cream
1 teaspoon pure vanilla extract
1 tablespoon honey
In a small food processor or with a hand-held mixer, combine the cream, vanilla and honey. Whip or beat the mixture until just thicker than a regular whipped cream for a more buttery texture.
