Zucchini is a versatile vegetable and can be served with a variety of dishes. It is always nice to find new or different ways to prepare a favorite - like zucchini. Zucchini has a mild flavor and often all that's needed is a drizzle of olive oil and salt!
Zucchini hash browns are pretty simple to prepare. First, shred the zucchini using a box grater, or whatever you have on hand, making sure it is a coarse rather than fine grate. After shredding, sprinkle the zucchini with salt and let it sit for a few minutes. The salt will draw out the moisture so the zucchini isn't too soggy.
Heat 1 Tbsp of vegetable oil over medium heat in a skillet. Squeeze the moisture out of the zucchini (using a colander, press the zucchini against the bottom with a spoon) and add it to the oil. Season it with pepper, onion powder and garlic powder. Cook about 10 minutes, stirring occasionally, until slightly browned.
Sprinkle with parmesan cheese and serve as a side with your main entree, in this case, it was scrambled eggs with bacon.
