Yummy Penne (makes 2 servings)
1 1/2 C whole wheat penne
1 1/2 C semolina macaroni
1/2 organic zucchini, ends removed, chopped
4 tbsp. healthy and delicious vegetarian meat substitute, beef flavor
1 large can organic tomato sauce
6 tbsp. Bragg Liquid Aminos
1 tsp. garlic powder
1 tsp. onion powder
4 tbsp. extra light olive oil
4 tbsp. sunflower oil
4 tbsp. organic flax oil
Instructions: Bring 2 medium size stainless steel pots of purified or filtered water to a rapid boil. 1 pot is for the pasta and the other pot is for the zucchini. Once the water reaches a rapid boil, pour in the penne and stir thoroughly to prevent it from sticking and reduce the heat to medium. Do the same thing with the zucchini in the 2nd pot, only you don't need to stir the zucchini quite as vigorously, but you do need to reduce the heat to medium. When the penne starts softening just slightly, pour in the macaroni and again, stir vigorously. The pasta will take approximately 25 minutes altogether to cook and you need to stir evenly every 10 minutes to prevent sticking. Now, the zucchini is probably finished cooking, so go ahead and drain the water thoroughly. You can check the pasta to see if it's soft enough, but you probably need to allow it to cook for at least 20 more minutes and then when it's done and soft enough to eat, turn off the heat and thoroughly drain the water.
Set both the pasta and zucchini aside. Warm some olive oil and sunflower oil in a nontoxic nonstick fry pan and when it starts to sizzle lightly, rip many small balls of the Gimme Lean mixture and pour into the cooking oil. I do this to try and make them like little vegetarian meatballs. Stir evenly and let them cook for 10 minutes until they begin to sizzle and brown and become a bit chewy and then pour in the tomato sauce and continue stirring evenly while it sizzles. Add the remaining ingredients, including the organic flax oil, and stir for 5 more minutes. It's best to add the flax oil to the dish when it's finished cooking because it's best to consume organic flax oil when it's fresh and not cooked. Turn off the heat, serve, and enjoy!
