Your Not-So-Traditional Carrot Recipe

Carrots are a great colorful and healthy vegetable said to improve your eyesight. Sometimes the same old same carrot recipe can be boring and stale. So, here’s a zesty and healthy recipe derived from Morocco, sure to wake up those bored taste buds this holiday season.

Serves 4

Ingredients:

6-carrots (peeled and sliced into ¼ inch rounds)

2-lemons

1-teaspoon extra virgin olive oil

1-tablespoon freshly chopped cilantro

1-tablespoon freshly chopped parsley

1-tablespoon or two cloves of chopped garlic

½-teaspoon of crushed red pepper flakes

1-teaspoon of cumin

1-teaspoon of paprika

Method:

Peel, chop and steam the carrots until cooked, this will take about 7 minutes.

Let carrots cool for about 5 minutes.

Combine all of your ingredients in a bowl and add the carrots.

Let refrigerate for 15 minutes.

Add additional red pepper flakes for spicier taste.
