Breakfast is the most important meal of the day. And who doesn't love pancakes for breakfast on a Saturday morning? Well how about some healthy pancakes packed with all natural ingredients? These pancakes are much more filling than the pancakes you would get from your average boxed pancake mix, so you'll only need to eat a short stack. This recipe can be made sugar free, fat free, and gluten free (but not taste free) so you can adjust it based on your dietary needs, without giving up any of the flavor.
Say good morning to your new favorite pancakes.
2/3 cup gluten free all purpose flour (or your choice of all purpose flour)
2 tbsp rolled oats
1 1/2 tsp cinnamon
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp coconut sugar (exclude for sugar-free version)
1/2 cup unsweetened applesauce
1 tsp pure vanilla extract
3 tbsp milk of choice
2 tbsp coconut oil (melted) (replace with 2 more tbsp of milk for fat-free pancakes)
Combine dry ingredients in a bowl, then add wet. Mix well. Cook on an oiled pan (coconut oil is suggested) on low-medium heat, flipping each pancake once until done.
(makes 4-6 pancakes, serving size is 2 pancakes)
