Young chef brings unique spin on Euro-Mediterranean cuisine to Jersey Shore

Young blood has infused the culinary scene on the Jersey Shore with a unique interpretation of Euro-Mediterranean cuisine. On Friday, December 20, 25-year-old restaurateur/executive chef Ryan Lory opened Bistro Rylo in Ocean Township. In his first culinary venture, Chef Lory wants to bring the WOW factor to the restaurant scene in a location that has a dearth of upscale Manhattan-style restaurants. His highly anticipated Euro-Mediterranean-inspired bistro, which is centrally located between the widely acclaimed restaurant scene in Red Bank, Rumson and Long Branch’s Pier Village, will bring a higher level of dining to this area. In renovating and redesigning the existing restaurant, Lory brought his vision of a modern and inviting restaurant to food-loving patrons who seek an elevated dining experience at an approachable price point.

“Bistro Rylo will be a unique addition to the region’s culinary landscape,” comments Chef Lory. “My vision is to bring a Manhattan-style dining experience, complete with whimsical plating and palatable flavors, to foodies looking to experience gourmet cuisine in a warm and inviting setting. The creative process, from menu selection to restaurant aesthetic, has been an incredible and exciting journey. My entire team is excited to share the Bistro Rylo vision with patrons.”

At a private preview event on December 19, menu selections and samplings included Lory’s signature 24-hour braised short ribs with a French-style bordelaise sauce, duck confit French toast, paella, scallops on a bed of bacon succotash, and an array of traditional desserts that featured a foie gras pot de crème nested under poached pear and gingerbread.

Chef Lory has assembled a stellar culinary team that includes Irish-born Chef Sam Byrne and Chef Ryan Lor (no relation to Lory). Chef Byrne worked his way along the culinary path throughout Europe at Michelin-star restaurants, including the acclaimed elBulli in Roses, Catalonia, Spain. Pastry Chef Lor has held positions at Big Canyon Country Club in Newport Beach and David Burke Fromagerie in Rumson. The chefs all share a common bond with their unwavering passion for the culinary arts that will be showcased on the Bistro Rylo menu.

Lory graduated with honors from The Art Institute of California from which he accredits his classic French training – a significant inspiration in creating his recipes and menus. Influences in the Euro-Mediterranean menu will feature flavors from France, Spain, Italy and Greece. The menu will be seasonal changing every few weeks depending on availability of product. Tasting menus will be offered on a regular basis. Entrées range from $14 for the chefs’ burgers to $40 for filet mignon.

Lory describes the atmosphere of Bistro Rylo as warm and relaxed with dark wood paneling, tones of burgundy and a brown-painted tin ceiling. The décor is a take on minimalist modern Mediterranean. Bistro Rylo seats 85-90 guests and is currently BYO. Hours are: Tues.-Thurs., 5-9:30 p.m.; Fri. and Sat., 5-10:30 p.m., and Sun., 5-9:30 p.m.; closed on Mondays.
