Fire On The Mountain goes about operating a restaurant much differently than your average eatery. Andrea and Craig made sure that this Highlands restaurant received recognition as the first certified green restaurant in the neighborhood. This growing area is home to many fine restaurants, but none serve up the kind of food that these restauranteurs provide their customers.
They use fresh high-quality ingredients
What sets this Highlands eatery apart from the rest? They use only the freshest, highest quality ingredients and you can taste the difference. They start by using only Redbird Farms chickens who tend to be a little smaller because they are all natural. The tasty wings they serve have been kept free of hormones and antibiotics and their chickens are even cage-free birds.
Next, they fry their tasty wings in 100 percent trans-fat free oil until they are hot and crispy on the outside and juicy and tender on the inside. Andrea brought me a plate of Jamaican Jerk wings and they were delicious. Andrea said, “Here at Fire On The Mountain, we think fresh, happy chicken makes all the difference. We can taste the difference, and we invite you to do the same!”
A greener restaurant model
Fire On The Mountain recently became the first "certified green" restaurant in the growing Highlands area. That is a term I was not familiar with and Andrea told me that means they compost all their leftover meat, bones, food scraps, paper products, to go containers and cups. They are able to compost close to 80 percent of their waste. What happens to their used fryer oil? Yep, they turn it into renewable biodiesel fuel. FOTM also recycles all of their cardboard, glass, plastics and metal. They use compostable to-go boxes, bags, cups, straws, and portion cups.
They even encourage their customers to walk or ride their bicycle to the restaurant. FOTM offers a 10 percent discount for those who make the effort to bike, walk, roll, bus, or take alternative transportation. Customers can sit outside on the comfortable patio next to the garden where Andrea grows fresh tomatoes, herbs and peppers that she uses to make their twelve delicious in house wing and sandwich sauces. It’s all about fresh at FOTM.
Do they just serve wings?
They serve the tastiest wings in Denver, but FOTM also serves up Colorado grass fed burgers, homemade vegan wings, awesome salads, onion rings, fried pickles and bleu-cheese stuffed mushrooms that are all homemade. One to die-for sandwich is called “The Emma” that was featured in 5280’s profile. It’s breaded chicken tenders tossed in buffalo bleu sauce and topped with bacon, bleu cheese crumbles, lettuce, tomato and onion on brioche.
