1 bag of yellow rice
1 lb. of squash, cooked
1 lb. of zucchini, cooked
1 lb. of cucumbers, sliced
½ cup of sweet onions, chopped
8 cups of water or chicken broth
1. Bring 8 cups of water or chicken broth to a roaring boil.
2. Cook the rice according to package directions.
3. During the last 10 minutes of cooking rice, add the squash, zucchini, cucumbers, and onions.
4. Once all the ingredients are tender, fluff rice with a fork.
